In a strategic leadership move that underscores the growing importance of digital transformation in the fast-casual sector, Jersey Mike’s Subs announced Tuesday the appointment of Stacy Peterson as president and chief operating officer of the Manasquan, New Jersey-based sandwich franchise.
Peterson, who previously served as CEO of Jeni’s Splendid Ice Creams since 2022, replaces Mike Manzo as chief operating officer, marking the end of Manzo’s two-decade tenure in the role. The appointment positions Peterson at the helm of Jersey Mike’s U.S. operations, marketing, and technology initiatives during a critical expansion phase for the 2,200-unit chain.
As President and Chief Operating Officer, Peterson will lead Jersey Mike’s U.S. operations and oversee marketing and technology, drawing on her extensive experience to drive innovation and operational excellence, accelerate digital transformation ā capabilities that have become essential currency in today’s competitive fast-casual landscape.
Her appointment brings proven digital transformation credentials to Jersey Mike’s leadership table. During her nearly decade-long tenure at Wingstop, Peterson served in various leadership roles across marketing, innovation, technology, and operations, ultimately as Chief Revenue & Technology Officer. There, she architected revenue-driving initiatives that transformed the brand’s digital capabilities.
Peterson was instrumental in building Wingstop’s digital and delivery business, which now generates $2 billion annually, while helping grow the chain from 550 units to more than 1,900 locations during her tenure. This operational scaling experience positions her uniquely to navigate Jersey Mike’s ambitious growth trajectory.
