Manish Mehrotra Launches MMCA, Ushering a New Culinary Era in India

Chef Manish Mehrotra, one of India’s most celebrated culinary innovators, has launched Manish Mehrotra Culinary Arts (MMCA), a contemporary culinary platform that he describes as a return to the elemental soul of food. MMCA aims to blend tradition, craft, and innovation into immersive dining experiences, mentorship for emerging chefs, and new restaurant formats.

Backed by co-founders Amit Khanna (Amaya Ventures) and Binny Bansal (Flipkart co-founder), MMCA intends to reshape India’s gastronomic conversation. Khanna said, and ET Hospitality noted, the backing is “about more than opening restaurants; it’s about giving him [Mehrotra] the freedom to own his craft and set the stage for future chefs.” Bansal added, “MMCA isn’t chasing trends. It’s built with clarity and patience, designed to evolve meaningfully over the years.”

The platform’s first restaurant will open in New Delhi in late 2025, focusing on grain, fire, and comfort, interpreting Indian kitchens through soulful, seasonal flavor and restrained design. A catering arm is slated to begin operations in early 2026.

Mehrotra describes MMCA as a space where “food as a cultural narrative” bridges tradition with global perspectives, and chefs are free to explore and express their craft. He calls the first project “quiet, purposeful, and Indian food-forward … defined by integrity.”
