In the centre of Downtown Dubai, where the Burj Khalifa dominates the skyline and the expectation for opulence is the lowest common denominator, a restaurant has come along to offer an entirely new outlook on what dining in the 21st Century can be! Imagine the Kempinski Central Avenue restaurant. The walls will display artwork generated by algorithms. The chef will serve food on plates designed by HermĆØs, blending the best dishes from around the world. In addition to holograms that depict your experience upon entering the restaurant, you will also have motion sensors that follow your every move, turning your physical movement into cascading digital poetry.
This is not a case of a show without substance, but, instead, it is the first AI-driven restaurant in Dubai, Zenon. Here, technology and gastronomy work in unison to create a dining experience that breaks away from tradition.
The Digital Oracle

Zenon’s partnership with Ouchhh Studios defines Zenon’s innovative identity in ways never seen before. Ouchhh Studios creates digital art powered by artificial intelligence, responsive to current city data for Dubai, bringing life to the city’s development. A series of images is created from real-time data collected from the city encompassing over 30 million pixels across many different types of displays; therefore, there will always be something new to see during your next visit to Zenon.
On the terrace, there is a large digital display measuring 31m long by 30m high that showcases images of Dubai through an actual waterfall. Driving by the highway, you will be able to see the 31 x 30-meter waterfall display telling everyone that you are at Zenon, a place of entertainment and amusement.
The dining area also offers an interactive experience upon arrival. You will experience this through motion detectors that control how the digital wall’s colors and shapes respond to your movements. When you raise your hand, shift your weight, or lean forward while speaking with someone, the wall will change its appearance in front of you through ripples of color and flowing forms. The dining experience is based on interactive performance art, where diners become co-creators.
The technical infrastructure to make this performance art happen was engineered by Vivid Studios. Vivid Studios installed many Ayrton Zonda 9 FX and 3 FX moving heads in extensive overhead chandeliers suspended from the ceiling of the lounge at a height of 18 meters above the lounge’s dining area, where diners will experience the full effect of the beefsteak experience. The laser-sourced Cobra fixtures create light using strategically placed mirrors throughout the lounge to add dimension and depth.
An Avolites desk orchestrates this digital symphony, synchronizing lighting and video effects during restaurant hours before releasing control to in-house technicians who freestyle with the evening’s musical selections.
The Culinary Triumvirate

At Zenon, the executive chef, Lorenzo Buccarini, is the engine that provides creative inspiration for each exquisite dish. With his passion for exceptional food and attention to detail, every plate leaves a visual impact on the customer; they are created with great care and precision. Head chef Thomas Papas adds his skills cultivated through experience in Milan and Vienna, and specialises in Mediterranean cuisine as part of Zenon’s unique offering. Sushi chef Tatsuya Ueda creates theatre from the Omakase counter; he is well versed in the art of sushi, having trained at Naga Imo Exclusive in Cambodia and owning Ichitatsu Beyond in Osaka.
Together, these chefs create a menu that has no boundaries. Hokkaido scallops bathe in garlic butter and yuzu pepper, served in their larger-than-life shells begging to be mopped up with a loaf of crusty bread. Wagyu beef maki rolls exemplify the art of fusion; these perfectly crafted maki rolls challenge what we think of when we think of fusion. Lobster pasta features casarecce, lovingly tossed in a luscious tomato bisque, generously studded with tender pieces of sweet lobster meat. Four Australian lamb cutlets, marinated in rosemary and thyme, partner with velvety mash and grilled asparagus.
The menu sprawls across continents with intention. Burrata, truffle risotto, beef tartare, and caviar coexist with salmon carpaccio adorned with seaweed and sesame dressing. For those seeking a theatrical conclusion, a Greek yogurt and white chocolate parfait or a traditional Sabayon with marsala ice cream and crunchy pearls provides a sweet resolution.
The HermĆØs Element

Zenon’s unique quality is also reflected in creating a brand identity that extends beyond products. All Zenon plates are made by HermĆØs and are therefore considered luxurious tableware, creating a statement piece on your dinner table. In addition, all crockery is imported from around the world, adding layers of luxury to the dining experience. Customers take pictures of their meals not just because of the incredible food they prepare, but also because of the beauty of the designer crockery they use to present their creations.
HermĆØs doesn’t just create a luxurious feel through plateware; it also does so with other items, such as the vintage car. A vintage car is parked prominently with HermĆØs signature orange boxes piled high inside the vehicle, topped off with a giant teddy bear. This Instagram-friendly display illustrates how Dubai defines modern-day luxury: creating opportunities to share your experiences with friends via social media while enjoying quality meals.
The Mythological Framework

Rooted in Greek mythology and named to evoke Zeus, Zenon constructs its identity around ancient narratives reimagined through a contemporary lens. Statues of Heracles, Apollo, and Dionysus act as a grounding classical influence, juxtaposed with floor-to-ceiling screens that provide a futuristic heartbeat to the space; thus creating an atmosphere of temporal discord that fits perfectly with the aesthetic of Dubai and its sense of modernity, through the lens of how we perceive Mount Olympus today, in an era of advanced technology.
The restaurant’s mythology extends into its operational philosophy. General Manager Oktay Unlu who has more than twenty years of experience in the food and beverage industry around the world including an extensive background in opening and operating restaurants in Dubai and leading Nusr-Et Steakhouse to become Dubaiās Best Steakhouse in 2020 and 2021, describes Zenon as more than just a place to dine; it is also a way to experience a merging of the three pillars of creationā innovation, art, and gastronomyā in one place.
As the architect for Zenon, Davide Algranti has created an experience that extends beyond the confines of a traditional restaurant. He has spent the vast majority of his career building restaurants in the Americas, Europe, Australia, and North Africa, and has gained a global perspective on design during those years that have been pivotal to the vision behind Zenon. Every single element of design, from lighting to layout, has been carefully crafted to create what he calls a “multi-sensory masterpiece” in this restaurant’s experience. The restaurant’s design combines a luxurious environment with artistic quality, creating spaces where high ceilings showcase the largest dynamic digital art pieces while allowing intimate seating arrangements.
The architect’s design achieves this by using a two-level structure that provides room for 340 seats, divided into distinct zones. The main dining area is furnished with plush seating in bright orange, yellow, teal, and blue, and the flooring features intricate tile patterns. Pink mirrors and miniature Greek sculptures create intimate pockets upstairs, while the VIP area commands views of the bar and DJ below, where holographic Greek entities materialize throughout evening service. An outdoor terrace capitalizes on Dubai’s cooler months, providing an alternative ambiance beneath that massive digital waterfall.
The Transformation Protocol

As day turns into night, Zenon transforms from an upscale Mediterranean-Asian eatery into a club and nightlife hub, featuring live music from our DJs until 3 am, along with visual displays created with artificial intelligence. As customers drink and party beyond dinner hours, the heavy door to this separate bar area will be shut, allowing those who want to continue celebrating after dinner to have their own sanctuary.
Zenon is a Two-in-One: by day, it is a fine-dining restaurant; by night, it is a nightclub and party venue. As such, Zenon embodies the concept of multifunctionality expected of venues in Dubai, where both quality food and party atmospheres are created to help achieve maximum enjoyment and satisfaction. Zenon’s alcohol license, which is relatively rare for restaurants located within the Dubai Mall, adds to the restaurant’s appeal.
Zenon was launched at Dubai Mall’s Address Hotel in October 2023, then relocated to Kempinski Hotel Central Avenue, where it has gained recognition among both industry professionals and its patrons by winning a Travelers’ Choice award from TripAdvisor, placing Zenon among the top 10% of TripAdvisor properties worldwide. Design accolades followed, with recognition for Best Use of Art in an F&B Project, Best Interior Design, Best Digital Transformation in Hospitality, and Best Fine Dining Mediterranean Restaurant.
These acknowledgments validate the execution of the concept. In Dubai, where more restaurants than ever are competing with gimmicks and special promotions to gain customer loyalty and increase profitability, Zenon is winning the battle by offering both substance and show. The use of AI has improved the guest experience and offers the opportunity to appreciate exceptional food in beautiful environments without being dominated by the technology itself.
The Immersive Reality

What makes Zenon special compared to other competitors trying to incorporate technology into their restaurant(s) is the ease of execution; instead of being an added distraction, the large-sized screens are a beautiful and organic extension of the atmosphere (art) within the restaurants. The first thing you see when entering is a hologram of “Zenon,” the virtual host created by Hypervsn Holofan; he greets guests as they arrive and walks them through the restaurant, creating an experience that enhances but does not take away from the overall dining experience. A dedicated technology team ensures perpetual functionality, maintaining systems that lesser establishments would allow to degrade into novelty.
The restaurant employs this technology not as a crutch but as an enhancement. If you were to remove the AI, motion-detection sensors, algorithmic art, and everything else, Zenon would still create an environment that attracts people’s attention through the beauty of its architecture, the quality of its food, and the level of service provided to customers. This technology serves to enhance the strengths already present in the business, not make up for weaknesses; this distinction is what will make a concept stand the test of time.
Zenon represents the continuously evolving experiments underway in Dubai exploring future concepts in hospitality. In a city that has built a model of transforming the impossible into operational realities, this restaurant poses the question of whether an experience can marry ancient culinary techniques with modern technology, and combine Mediterranean and Asian flavour profiles on a plate. Whether algorithms can generate art that enhances rather than overshadows human experience.
The answer, plate by HermĆØs plate, appears to be yes. Zenon succeeds not despite its ambitious fusion of disparate elements but because of meticulous attention to how those elements interact. It proves that innovation requires not the abandonment of tradition but reimagining how tradition manifests in a contemporary context.
In a city where spectacle is currency and innovation is expectation, Zenon delivers both without sacrificing the fundamental promise of exceptional dining. This is the future the restaurant industry continues building, one algorithm, one perfectly plated dish, one responsive digital canvas at a time.
