Maido, the Lima restaurant named The World’s Best Restaurant 2025, will make its first appearance in India with two exclusive dinners at The St. Regis Mumbai on September 25 and 26. The collaboration brings chef-founder Mitsuharu “Micha” Tsumura and his team from Peru to Mumbai as part of Masters of Marriott Bonvoy and Culinary Culture, in association with American Express.
The two-night event will see Maido’s signature Nikkei cuisine recreated at Koishii, The St. Regis Mumbai, giving diners an opportunity to experience the restaurant’s interpretation of the culinary relationship between Japan and Peru without traveling to Lima.
The timing adds significance to the collaboration. Maido currently holds the No.1 position on The World’s 50 Best Restaurants 2025 list, while the 2026 ranking is scheduled to be announced in Lima on November 4. The restaurant will subsequently join the ranking’s “Best of the Best” group and become ineligible for future editions.
Tsumura, who was born in Lima, opened Maido in 2009 at the age of 28. The restaurant’s name comes from the Japanese greeting “Maido,” reflecting the chef’s Japanese heritage and the cultural foundation of his cooking.

At Maido, Japanese techniques and precision are applied to Peru’s exceptionally diverse produce, seafood, and culinary traditions. That intersection forms the foundation of Nikkei cuisine and has become central to Tsumura’s identity as a chef.
The Mumbai dinners will feature signature Maido dishes prepared by Tsumura and his team at Koishii, rather than simply recreating the restaurant’s experience through a guest-chef appearance. For The St. Regis Mumbai, the collaboration also builds on Koishii’s existing positioning around Nikkei cuisine.
“I am very interested in learning from your culture, your country and your cuisine, and it will be a pleasure to show you what we do at Maido,” said Tsumura ahead of the visit.
For Marriott International, the event is part of its broader Masters of Marriott Bonvoy culinary program, which has increasingly used international chef collaborations to connect its luxury hospitality portfolio with globally recognized restaurant talent.
“Chef Micha’s artistry sits perfectly with that ambition,” said Khushnooma Kapadia, Vice President, Marketing, South Asia at Marriott International, adding that the program aims to bring exceptional culinary talent and memorable dining experiences to its guests.
The collaboration is also the latest international culinary project between Culinary Culture and Masters of Marriott Bonvoy. Previous partnerships have brought restaurants including Mirazur from France, Osteria Francescana from Italy and Central from Peru to Indian diners.
For Culinary Culture CEO Raaj Sanghvi, the Maido collaboration represents another opportunity to create a two-way exchange rather than simply import a celebrated restaurant experience. “We hope they go back to Peru carrying something of India with them,” he said.
Both September dinners are already fully booked, according to the organizers.
